| Piemonte INSALATA DI OVOLI E TARTUFI Salad of Ovoli and Truffles Ovoli (spectacular scarlet and orange mushrooms) are now fairly rare and hence highly prized, and white truffles are tubers that grow mainly in the Alba area between October and January. They grow beneath the roots of chestnut trees, always in the same places - which the truffles gatherers never reveal to anyone else. The Piedmontese white truffle has a wonderfully distinctive scent that is much sought after. It is served sliced over pasta, rice, eggs or polenta. Ovoli have an orangey-red cap. Toscana CACIUCCO ALLA LIVORNESE Livorno Fish Stew Livorno, or Leghorn, is a city by the sea, famous for its beautiful seventeenth-century port, its naval academy, and its fish soup called caciucco, of which crustaceans and mollusks are essential ingredients. Umbria FRITTATA AI TARTUFI NERI Black Truffle Frittata Black truffles are a specialty of Norcia, a small town in Umbria. Vegetable frittatas are very popular all year round. Here, as almost everywhere else in Italy, the vegetables used vary according to the season. In summer there are zucchini, peas or beans; in winter the popular radicchio, fennel or celery. Lombardia MIASCIA Bread and Fruit Pudding Miascia is a very and tasty bread pudding, a specialty of Lake Como. The rosemary gives it a very special flavor. Sweet dishes in Italy are often given an added flavoring of herbs or flowers such as lavender, rosemary, roses or elderflowers. |
