Good soup is easy to make, especially if you use the freshest ingredients,
especially those in season. A good stock is necessary as the basis for many
– though by no means all – soups. It takes time to make, but large
quantities can be prepared in advance and frozen in smaller portions to
await a bout of soup making at your convenience. Basically stocks are the
only food we recommend you to freeze.  

Frozen stock can be stored in the freezer for up to six months. Make sure you
label each stock carefully for easy identification.

Fresh stocks are indispensable for creating good homemade soups. They
add a depth of flavor that plain water just cannot achieve. Although many
supermarkets sell tubs of fresh stock, these are expensive and usually
very tasteless. Homemade stocks aren’t just cheaper, they’re also a lot
tastier and they can be much more nutritious, too, precisely because they’
re made with fresh, natural ingredients.
